Easy Hostel Risotto Recipe

After having a sook that all we eat is pasta (even though its not) tonight we cooked risotto from this really easy recipe:

Ingredients
2 onions, finely chopped
200 g mushrooms, chopped (or more)
2 cups arborio rice
1 liter chicken stock
1 cup parmesan cheese
oil

Directions:

Heat oil in pan, add onions and mushrooms.

Cook until onions are soft.

Add rice, stir until combined.

Put stock in another pan and boil.

Stir in 2/3 cup stock to the rice.

Stir until all absorbed.

Continue adding stock in small amounts in this fashion until all used.

When this process is finished, add cheese.

Serve.

We also added garlic and carrots just cos we had them and I guess you could add anything else you wanted also. We really wanted to add chicken but there was none at the shops and it made it heaps cheaper.

In the end we added a bit too much water to the chicken stock and I couldn’t be bothered waiting for it to absorb so the picture below doesn’t look great and aesthetically it wasn’t that nice but who cares!

All together the meal cost of 6 Leva which is 3 Australian Dollars and we have lunch for tomorrow so job well done!
